PROJECT X is an espresso and coffee blend created for Sawada Coffee and Hiroshi Sawada by Metropolis Coffee Company. Starting from samples of beans Hiroshi roasted for his Tokyo cafe, and working in secret (Code Name: “Project X”), Metropolis fashioned a blend that seamlessly recreated not just the flavor of his classic Japanese style, but also its intent. Coffee may be a simple and everyday experience, but when it’s perfect, it makes part of your day perfect, too. That’s world-class coffee culture.

I love these beans and buy them often. They are so complex and absolutely a daily pleasure.
I have been wanting to try this blend for a while. I typically use Redline as my go-to espresso blend, but I enjoy trying out different blends from time to time. This blend is definitely roasted darker than Redline so I decided to use the Robot and pull some shots this weekend. The photos show results from a Saturday afternoon shot and follow-up shot on Sunday morning. This blend worked perfectly with the Robot and the shots were very enjoyable - keep the temperature down, avoid over-extraction, and savor the results!
